Ingredients
For the Marinade

  • 1/2 T soy sauce
  • 1/2 T cooking sherry
  • 1 egg white
  • 8 oz skinless boneless chicken breast, cut into one-inch cubes

For the Sauce

  • 3 T chicken stock
  • 1 T tomato paste
  • 3/4 T soy sauce
  • 3/4 T rice vinegar
  • 1 tsp hoisin sauce
  • 1/2 tsp chili paste
  • 1 tsp vegetable oil
  • 3/4 T sugar
  • 1 tsp cornstarch

Coating and Cooking

  • about 3/4 c cornstarch
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 4-5 T vegetable oil
  • 1/4 tsp chili flakes
  • 2 cloves garlic, minced
  • sesame seeds for garnish
  • scallion greens, sliced thinly, for garnish
