  • 2 tablespoon mirin
  • 1 tablespoon soy sauce
  • 1 medium clove garlic grated
  • 900 grams (32 ounces) chicken drumlettes
  • 3 scallions, white parts only (40 grams / 1.4 ounces)
  • 1 teaspoon baking soda
  • 1/3 cup potato starch
  • 4 tablespoons ponzu
  • 1/2 teaspoon yuzu kosho (or other potent hot sauce)
