Really tasty and easy to make. You could also use canned peaches in place of the mango for a slightly less expensive version. I also added red pepper flakes for a little heat and lots of fresh cilantro.

Ingredients

1 teaspoon olive oil
1 1/2 cups diced red onion
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
2 poblano peppers, seeded and chopped
1 (15-ounce) can black beans, rinsed and drained
1 fresh mango, diced
1/3 cup cubed peeled avocado
Whole wheat tortillas, or whole wheat and corn tortillas (any high fiber tortilla will work well)
Olive Oil Cooking spray
1/2 cup (2 ounces) shredded reduced-fat mexican cheese blend
