Zucchini Fritters-This could also be made lower carb by reducing the potatoes, or replacing white potato with sweet potato, which I think would be interesting with basil as the herb. I think this would be fun for Marlo to learn a great side dish with lots of open room for experimentation that won't load her up on carbs.
Ingredients
  • 2 lbs. zucchini (about 4 medium)
  • Kosher salt
  • 4 scallions, sliced (about ¾ cup)
  • 2 tablespoons fresh, chopped dill
  • 2 tablespoons fresh, chopped parsley
  • 1 ½ tablespoons fresh, chopped mint
  • 1 large egg
  • 1 egg white
  • 2/3 cup crumbled reduced fat feta cheese
  • ½ cup white whole wheat flour
  • ½ teaspoon baking powder
  • ¼ cup whole wheat breadcrumbs
  • Black pepper
  • Pinch red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Tzatziki:
  • ½ cup nonfat Greek yogurt
  • 1/3 cup finely chopped or grated cucumber
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh, chopped dill
